Berry Pie, its always in season!

I know its not the season for this pie… But we have to do what we want, because life is short!

If I had to pick my absolute favorite kind of cooking I would say baking a pie. And if I had to pick my favorite pie to make I’d say Mixed Berry Pie. There are tons of recipes out there that are a variation of this pie but this recipe is mine. Out of trial and reassessing this is what turns out the best in my opinion. I hope you enjoy making it as much as I do!!

  1. Place half of pastry on wax paper

2. Press down to start flattening pastry

3. Roll out pastry to about 12 inch circle

4. Pull off top layer of wax paper

5. Transfer pastry to empty pie pan

6. Roll out top pastry and using a knife, or a rolling cutter, cut pastry into strips

7. Fill lined dish with fruit filling and weave top pastry

8. Seal top and bottom pastry by pressing down edges with thumb

Spring Berry Pie

Filling;

1 cup quartered strawberries

1 cup raspberries

1 cup blue berries

1 cup blackberries

¼ cup granulated sugar

2 tablespoons cornstarch

dash of cinnamon

dash of nutmeg

1 tablespoon lemon zest

Mix all together in a medium bowl and let sit for about 20 minutes.

Pie pastry:

2/3 cup pluse 2 tablespoons shortening

2 cups flour

1 teaspoon salt

4 to 5 tablespoons cold water

Preheat oven to 350 degrees F. Roll out top and bottom pie pasties. Line pie pan with on pastry and fill with fruit filling. Lay top pastry over top the fruit. Seal top and bottom pastries along side of pie pan with thumb. Cut 4-8 vent in the top pastry.

Mix together all ingredients with your hands. Start with 4 tablespoons of cold water and if dry add 5th tablespoon. Split dough in half. To avoid the messy flour situation roll crust in between two pieces of wax paper to a 12-inch circle. (If paper slides wet the counter top just slightly)

Transfer pastry to pie pan and pour the filling into the pan. Roll out the second half of the pastry. Place pastry on top and fold top pastry under access bottom pastry. Seal fold with thumbs. Cut 4-8 vent in the top pastry. Cover top of pie with tin foil, and place in hot oven. Bake 30 min or until filling is boiling. Remove tin foil and bake an additional 20 minutes or until crust is golden brown.

If you have a refreshing spring attitude you need to try making Grapefruit and Ginger juice! Grapefruit will add Vitamin C to boost your mood and the Ginger will cool the body and calm the nerves. [Plus] By making it yourself, you can avoid the added syrups and junk in store bought varieties.

Grapefruit & Ginger Juice

2 Tablespoons honey

2 Tablespoons ginger, peeled and thinly sliced

1 cup water

1 juicy ruby grapefruit, juiced

½ lemon, juiced

  1. Combine the honey, ginger, and water in a small saucepan. Bring to a soft boil and then simmer on low for 5 minutes. Then let sit off of heat for another 10 minutes.
  2. Combine the grapefruit and lemon juice in another bowl or pitcher. Add the honey, ginger and water mixture to the juice by pouring through a strainer. Discard ginger. Chill and enjoy!

[Sail bows] are a yes for this summer!

I just got a bow from sail bows and I love it! This one is the Penelope pattern, but there are so many great ones to choose from. Some of the patterns are even Lily Pulitzer!

I stumbled across Sail bows on Instagram and adored the brand immediately! I mean, with bows, what’s not to like! Plus the girl behind it all is from Orlando like me!

All of the bows are hand made with care! The bows come with a French barrette clip and made to be worn on the right side of the head.

I wear mine in many different ways though! The bow is the perfect size to go both on the side of your head and the back. I also love the easy look of the bow with a topknot!

I have found that the bow stays tight all day, which is so important! Having to continuously fix hair clips is the worst…

With the light yellow and white colors of the Penelope pattern I can pair the bow with almost any outfit! I have all ready worn it with an army green tank top, a bright blue top, and even a comfy black sundress.

I’m really going to have to get used to the Florida weather again. Taking pictures for this post was sweltering, even though it was late afternoon. But I really have missed this beautiful sunshine state!

Watch out I’m bringing back my [Bow]

Bow

Not that long ago I didn’t leave the house without a bow in my hair, but I started to reach for them less and less. In the past month, I have found myself digging them out of my drawer again. Oh how I have missed the excitement of placing these beauties in my hair!

The original bow was a spirited accessory in my high school colors. My mom made three, one for me and for two of my close friends.  After that I started making them for myself with different ribbons! People used to comment that I always had a bow to match my outfit, but in reality I just wear a lot of blue, green, and pink.

Today I was inspired to share my long lost bows. They just make me feel happy, pretty, and feminine!

Nothing feels more spring than [Easter]

Friday morning before class I drove to Target to pick up some coffee and print a few extra pictures. On my way there I remembered I had a coupon for $3 off 2 Covergirl products!

At Target I got what I needed plus I picked up a lipstick and a nail polish. But when I got to the register the coupon was expired… So I got the lipstick and nail polish any way!

When I got back to the dorm and swiped on that lipstick my heart literally started racing. The color was dreamy and the lipstick itself felt like silk! This lipstick is definitely my new favorite and one for the books. I put it on a little after 9 a.m. and never reapplied, but the color lasted until the evening.

The vibrant pink lip is super trendy this spring and it’s perfect for Easter tomorrow!
